Recipe Revisit: Paleo Avocado Egg Salad


Eons ago I shared my take on mayo-free egg salad, using avocado. It's a technique I still use often, and I'm always mixing up the other components. I still like to include curry powder, and find that a little apple cider vinegar gives a nice tang. This time I included some jarred organic relish instead of chopping pickles. If you like crunch I'd throw in some chopped celery too.

I just love the taste of avocado and egg together. Anyone else?

Recipe Revisit: Paleo Avocado Egg Salad 

4 hard-boiled eggs, chopped
1/2 avocado, diced
2 tbs. chopped pickles or sweet pickle relish
2 tbs. chopped red onion
1 tsp. curry powder
1 tsp. apple cider vinegar
salt, pepper & garlic powder to taste

Combine eggs, avocado, pickles or relish and onion in a bowl. Mash well with a fork to combine. 


Add curry powder and vinegar and mix well. Season to taste.
