Grain & Nut-free Blueberry Cobbler

I found this recipe when looking for a nut-free dessert using berries. I loved the look of the recipe's photo, not to mention the name of the site on which I found it: he won't know it's paleo. As those of you who follow me know, I call my fiancé a "caveman" in a very sarcastic tone. He loves his bagels, candy and chips. And I love it when I can impress with him with just how delicious and satisfying paleo recipes can be.

Everyone really liked this one, and it couldn't have been easier to make. I love that not only is it nut-free but also very low in added sweetener. The ratio of berry to topping is also heavier on the berries, so it's not a heavy dish at all. While the kids had this for dessert I would even serve it up for a breakfast treat!

Grain & Nut-Free Blueberry Cobbler
adapted from he won't know it's paleo

12 oz. blueberries
2 tbs. melted coconut oil (plus more to grease dish)
3 tbs. water
1/4 cup arrowroot starch
1/4 cup coconut flour
1/4 cup raw honey
1/4 tsp. salt
3/4 tsp. baking soda
1 1/2 tsp. lemon juice

Preheat oven to 300 and lightly grease an 8x8 baking dish with coconut oil.

Spread blueberries evenly across bottom of the dish.

Mix remaining ingredients with an electric mixer until combined. Spread batter over blueberries.

Bake for 35-40 minutes or until top is starting to turn golden brown.
