4-Ingredient Strawberry Truffles

I adapted this recipe from one in the February issue of Food Network magazine. It was included in a piece about Valentine's treats based on freeze-dried berries.

The treat was very easy to make with paleo-compliant ingredients, and the results were delicious! I used Enjoy Life dark-chocolate chips, and they added the perfect rich and fudgy flavor reminiscent of traditional truffles.

While I crushed my strawberries by hand, next time I would definitely run them through a spice grinder or food processor to ensure a totally smooth powder.

4-Ingredient Strawberry Truffles

1/2 cup coconut milk
2 tbs. coconut oil
8 oz. finely chopped bittersweet chocolate or dairy-free chocolate chips
freeze-dried strawberries

Run berries through a food processor or spice grinder until turned into a fine powder. I used a small bag from Trader Joe's (1.2 oz) and it yielded enough to roll the truffles in it a couple of times.

Place chocolate in a bowl.

Heat coconut milk and coconut oil in a small saucepan until the oil is melted. Pour mixture over chocolate and stir until chocolate is melted and mixture is smooth. Freeze for 2 hours or until mostly firm but pliable.

Roll mixture into balls (the original recipe called for 15… I came up with 14). Roll balls in strawberry powder until well-coated. Keep chilled until ready to enjoy.
