Sugar-Free Coconut N'Oatmeal


I've made about 3 different versions of this paleo porridge; I often come back to it when I'm craving something warm in the morning, but want to avoid any kind of added sweetener.

A little too much coconut can not only dominate the flavor but also make paleo hot cereal (literally) a little too hard to swallow.

Sugar-Free Coconut N'Oatmeal

3/4 cup coconut milk or water
3 tbs. coconut flour
2 tbs. ground flax
pinch of salt
1 egg
oatmeal toppings of choice (I used blackberries & cinnamon)

Heat liquid, coconut flour, flax and salt in a small saucepan. When it comes to a boil, cover the pot and reduce heat to low. Simmer for 2 minutes, stirring halfway through.

Remove pot from heat and crack in egg, stirring immediately. Return to low heat and cook, stirring often, for another 2 minutes. Texture should be thick and porridge-like.

Serve with oatmeal toppings of choice.
