Paleo "Almond Joy" Coffee Creamer


So we didn't get quite the blizzard that was predicted for Connecticut, but I still spent plenty of quality time home with my kids earlier this week. I have always associated snow days with hot cocoa and baking. How can you beat it when your kids come in freezing and soaking from a snowball fight?

I made this creamer to enjoy in my own mug of espresso, then poured a little into the hot cocoa I made for them. YUM.

I didn't go heavy at all on the sweetener here, so really the main flavor is almond. Extra delicious if you have the time to toast a little shredded coconut to sprinkle on top (it's in my mug but kind of hard to see in the photo).

Paleo "Almond Joy" Coffee Creamer

2/3 cup canned coconut milk (open can upside-down and use the thick part)
1/2 cup unsweetened almond milk
1/2 tsp. vanilla extract
1/2 tsp. almond extract
natural sweetener, to taste (I used granular stevia)
2 tbs. unsweetened cocoa powder
3 tbs. water

Combine coconut milk, almond milk, extracts and sweetener in a mason jar or other jar with a lid.

Put cocoa powder in a small bowl. Heat water to boiling (I use an electric kettle) and pour over cocoa powder. Still until it forms a paste.

Drop paste into jar with other ingredients. Place lid on jar and shake vigorously to combine.

Taste for sweetness and use as you would regular coffee creamer.
