Paleo Pan-Roasted Brussels Sprouts with Bacon

I haven't been posting as much because the holidays have definitely thrown a wrench in my usual kitchen activities. I did want to quickly share, though, this easy and delicious dish that's absolutely perfect for holiday spreads and entertaining.

Truth be told, I made it at lunchtime one day this week just so I could have it on hand for myself. When I have been inclined to share them, however, these sprouts are well-received by all (including both of my kids).

Nods to Sunny Anderson for this pan-roasting method, as I've always roasted my Brussels sprouts in the oven (which obviously takes a lot longer!).

Paleo Pan-Roasted Brussels Sprouts with Bacon

4 strips nitrite-free bacon
2 tbs. ghee or butter
1 lb. halved Brussels sprouts
1/2 large onion, chopped
salt & pepper, to taste

Cook bacon in a large skillet over medium-high heat until crispy. Remove to a paper towel-lined plate, then roughly chop.

In same pan with bacon fat, melt ghee or butter over high heat. Add onions and Brussels Sprouts and cook, stirring occasionally, until sprouts are golden brown, 8 to 10 minutes.

Season with salt and pepper, to taste, and toss bacon back into pan. Serve immediately.
