Paleo Eggs in Purgatory


I am all about easy this week, and you can't get much simpler than this one. I had some marinara sauce left over from Christmas dinner and turned it into a quick and tasty meal with the mere crack of an egg.

If you don't have marinara on hand, you can certainly make your own. I do like the Barefoot Contessa's version (and it's dairy-free), but any take on the sauce will work. You could even "beef" up the dish with meat in your sauce.

You could cook this on the stove top in a skillet, but I went with the oven.


Paleo Eggs in Purgatory 

2 cups marinara sauce
2 eggs
salt & pepper

Preheat oven to 400. Grease two oven-safe ramekins and divide marinara equally between them, making a well in the center.

Crack an egg into egg ramekin. Sprinkle with salt and pepper.

Bake at 400 until egg is cooked to your liking. I baked mine for about 10 minutes and then turned on the broiler for a minutes to finish them off.
