Simple Paleo Fried "Rice"

I have made a few different versions of pork fried rice, but came up with this simple version to please my kids. They love the "real" thing and don't favor too much spice or bells and whistles.

I had cooked a pork tenderloin yesterday and chopped that up for the protein; you can use any cooked protein or crisp up some chopped bacon and use its fat to cook the cauliflower rice.

Simple Paleo Fried "Rice"

4 tbs. coconut oil, divided
3 cups riced cauliflower
salt & pepper
2 eggs, lightly beaten
4 chopped scallions
3 minced carrots
2 minced garlic cloves
pinch of crushed red pepper
1 tsp. minced fresh ginger
2 tbs. coconut aminos
1 tsp. sesame oil
1-2 cups cooked and chopped meat
1/2 cup defrosted frozen organic peas (optional)
minced cilantro, to garnish

Heat 1 tbs. of oil in a large skillet over medium heat. Add riced cauliflower and season with salt and pepper. Cook for 5 minutes or until just starting to brown. Remove from skillet.

Heat another tbs. oil in skillet. Add eggs and spread out in skillet. Cook until they form a "pancake" and remove from skillet. Cut into strips and set aside.

Wipe out skillet and add remaining tbs. of oil. Add scallions and carrots and cook until carrots are soft, about 5 minutes. Add garlic, pepper and ginger and cook 1 minute more.

Add cauliflower to skillet along with coconut aminos and sesame oil. Stir to combine and cook for 2 minutes more.

Add egg back to skillet along with meat and peas. Cook for 3 minutes more.

Serve rice garnished with minced cilantro.
