Paleo Green Chili Burgers with Fried Eggs

Every once in a while I realize my cookbook collection is gathering a bit too much dust. I grab a stack, flip through and either discover new dishes or revisit old favorites I haven't made in a while.

In this case I stumbled upon a new recipe from an old classic: Mark Sisson's Primal Blueprint cookbook. I have honestly never made a "miss" from either of the PB cookbooks I won, and this was no exception.

I didn't have bison on hand, so opted for ground turkey. I also used canned green chiles just because timing was a little tight. These couldn't have been easier to throw together! The caveman grilled up the burgers while I sliced the avocado and fried the eggs. I put a dollop of organic salsa alongside for color and flavor.

This is a great one to try when you're craving a lot of flavor impact from minimal effort. YUM.

Paleo Green Chili Burgers with Fried Eggs

1 lb. ground turkey
1 small can diced green chiles, drained
1/2 cup minced cilantro
1/4 finely chopped onion
1 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. salt
4 eggs
sliced avocado & organic salsa, to garnish

Combine turkey with chiles, cilantro, onion and seasonings. Shape into burgers and grill.

Meanwhile, fry eggs. Top each burger with a fried egg and serve with avocado and salsa.
