Paleo Pumpkin Spice Almonds

I had a little get-together this week that involved finger food. I always like to serve at least one homemade item, but timing was a little crazy with commitments I had at my kids' school. I've been featuring pumpkin recipes on my family nutrition site, and came up with these quick and tasty spiced nuts for the occasion.

Everyone loved them! I just served them straight up, but if I make them again I'd love to toss them in a salad with autumnal flavors.

Paleo Pumpkin Spice Almonds

2 cups raw almonds
1/4 cup raw honey
3 tsp. cinnamon
2.5 tsp. pumpkin pie spice
1 tsp. vanilla extract
sea salt

Preheat oven to 325.

Combine nuts in a bowl with all ingredients but salt. Toss to coat.

Line a baking sheet with foil or parchment. Spread almonds out in an even layer. Sprinkle with sea salt and bake for 18-20 minutes.

Allow to cool before removing from sheet and serving.
