Easy Paleo Maple Almond Salmon

This is a re-share that I thought was worth posting again because it's so easy (and kid-friendly to boot). Almond meal, maple syrup and lemon juice are the keys to a flavorful grain-free coating. I also added some garlic powder this time around, and it really balanced nicely with the sweetness of the other components.

Usually I opt for pre-ground almond meal (I get mine at Trader Joe's), but tonight I ground my own raw almonds into meal. I actually liked the freshly ground meal; it didn't provide as even and fine a coating, but had a bit more flavor and added a little extra texture to the dish.

We enjoyed our salmon alongside a simple salad and dinner was ready (and eaten) in no time at all.

Easy Paleo Maple Almond Salmon

1.5 lb. salmon fillets, cut into 2 pieces
salt, pepper & garlic powder
1/4 cup pure maple syrup
1 tbs. Dijon mustard
juice of 1/2 lemon (plus more to garnish)
1/2 cup almond meal

Preheat oven to 350.

Season salmon on both sides with salt, pepper and garlic powder.

Combine maple syrup, Dijon mustard and lemon juice in a shallow bowl. Put almond meal in a separate shallow bowl.

Dip salmon in maple mixture, then dredge in almond meal. Place on a greased or foil or Silpat-lined baking sheet and bake for 20 minutes at 350.

If you want a crisper coating, finish off under the broiler until the almond coating just starts to brown.
