This one is for the caveman, who thinks pina coladas are just about the best thing ever. Of course he commented that it would taste even better with rum in it, but considering I made it at 10am I'm thinking a virgin was the way to go...
I adapted this one from a Cooking Light recipe that called for Greek yogurt for creaminess; the banana adds the same texture and also eliminates the need for added honey. I made both versions of the smoothie just to compare and everyone liked both!
adapted from Cooking Light
4 tsp. unsweetened shredded coconut
2 cups fresh or frozen pineapple chunks
1 large firm banana, cut into chunks
1 cup coconut milk
1 cup crushed ice or ice cubes
Toast coconut in a small skillet over low heat until golden. Remove from heat.
Combine all remaining ingredients in a blender and process until creamy and smooth. Serve with toasted coconut sprinkled on top.
