Lime & Cilantro Chicken Salad


I find it fascinating that there are some people who think cilantro tastes like soap. And apparently it's a genetic predisposition to find the herb offensive!

I guess I'm lucky to be wired such that I love the stuff. I especially enjoy it paired with lime, as it the duo just burst with fresh flavor. They really brighten up this easy chicken salad.

While I made this with some homemade mayo, I think next time I'm going to use mashed avocado instead. Avocado egg and chicken salad are two of my favorite easy lunches, and I don't always have homemade mayo on hand.

You can season this one as you like. I used a pretty generous hit of hot sauce, but I think some paprika would be tasty too. I do think salt and garlic are a must, but there's certainly room to experiment with the flavor combinations you most prefer.

Lime & Cilantro Chicken Salad

2 chicken breasts, poached or grilled
1/4 cup homemade mayo (for avocado option I'd suggest starting with 1/2 a ripe avocado)
3 minced scallions
juice of one lime
1/4 cup minced cilantro
salt & pepper
garlic powder
hot sauce, to taste

Shred chicken with two forks. Stir in mayonnaise, then add remaining ingredients and mix well. Taste for seasoning.
