Bacon-Wrapped Cilantro Chicken

I have been planning to try out this chicken recipe for ages, and with its simple ingredients and easy prep it seemed the perfect pick to make in our summer rental kitchen.

I had originally intended to make it for dinner one night, but wound up cooking up the chicken at about 9am this morning before heading out for a last day at the beach. It was actually delicious cold and very portable, and all of us loved and devoured it!

Both the cilantro and honey mustard not only added flavor but kept the chicken nice and moist. You could definitely get creative and liberal with the seasoning; I kept things simple with salt, pepper and garlic powder.

This one is definitely a keeper and I look forward to making it again in my own kitchen (where the props and lighting are a bit better too!)

Bacon-Wrapped Cilantro Chicken

1.5 lb. chicken breasts, cut into strips
6 strips of nitrite-free bacon, cut in half
2 tbs. of chopped cilantro
1.5 tbs. dijon mustard
2 tbs. raw honey
salt, pepper & garlic powder, to taste

Preheat oven to 400 degrees. In a large bowl combine the chicken strips, cilantro, mustard and honey. Season generously with salt, pepper and garlic powder.

Wrap each piece of chicken with a half strip of bacon and lay in an un-greased baking pan or rimmed baking sheet covered with foil.

Bake at 400 for 30 minutes or until cooked through.
