Watermelon & Mint Spritzer


Summer hasn't officially started yet, but our watermelon obsession has already kicked into high gear. Tomorrow night I'm making a shrimp dish with melon salad, and I used the rest of the melon to create this tasty drink as an after-school treat for my kids.

While I did include a can of Zevia in the pitcher, you could easily use all seltzer. I think it would still be plenty sweet. I will confess that the caveman was even more enthusiastic about the drink when he added a little vodka to his glass! But the kids loved it just as much in its pure form.


Watermelon & Mint Spritzer

2 cups coconut water
2 cups lemon-flavored seltzer
4 cups watermelon, pureed in a blender
1 12 oz. can of Zevia ginger ale (or 2 more cups seltzer)
fresh chopped mint, to garnish

Combine coconut water, seltzer and pureed watermelon in a large pitcher. Top with soda and stir.
Garnish with fresh mint before serving.
