Strawberry Chia Seed Jam

Chia seeds are funny little things. I don't think you can really argue with their nutritional value, but they definitely have a texture that isn't for everyone. I generally don't like the gelatinous texture, but it's absolutely perfect when your goal is to make something jelly-like.

This jam is literally just macerated berries with some chia and natural sweetener. I intentionally kept mine tart, but you could certainly opt for a sweeter jam. I used liquid stevia, but honey or maple syrup would work well too.

While it's tasty right after you make it, this jam does best after it's had at least an hour in the fridge. That gives the chia the chance to really absorb the liquid and develop the flavor and texture.

Strawberry Chia Seed Jam

2 cups fresh strawberries
2 tbs. chia seeds
natural sweetener, to taste (I used about 7 drops of liquid stevia)

Depending on the texture you prefer, you can either mash your berries with a fork (for a chunkier consistency) or pulse or puree them in a blender or food processor. For the jam you see in the photos I simply macerated the berries by hand with a fork.

Stir in chia seeds and sweeten to taste. Put mixture in a jar or container with a lid and refrigerate. For best results, allow to chill for at least an hour before eating.
