Prosciutto-Melon Skewers with Lime Drizzle


It's pretty rare that I make and share appetizer or snack recipes, so I was pretty pleased at how delicious and easy these are. Definitely worth trying out, especially if you have any summer entertaining on your agenda!

The original Cooking Light recipe called for short skewers, but I only had large ones. If you have neither I think this would make a delicious salad if you just gently toss all the ingredients together. It would elevate it from finger food to a nice summer side.

Prosciutto-Melon Skewers with Lime Drizzle

16 (1-inch) cubes cantaloupe
16 (1-inch) cubes honeydew melon
16 (1/4-ounce) very thin slices prosciutto, cut in half lengthwise
1 tbs. fresh lime juice
2 tsp. extra-virgin olive oil
1/4 tsp. crushed red pepper
2 tbs. thinly sliced fresh mint

Wrap each cantaloupe cube and each honeydew cube with 1/2 prosciutto slice. Thread 1 wrapped cantaloupe cube and 1 wrapped honeydew cube onto each of 16 (4-inch) skewers. 

Arrange skewers on a serving platter. Combine juice, oil, and pepper, stirring with a whisk; drizzle evenly over skewers. Sprinkle evenly with mint.
