This week on my healthy family food site I'm featured coconut. I love how this shake gets a double dose of one of my favorite foods; the shredded coconut really adds a nice thick texture and flavor.
You can make this completely unsweetened and omit the banana, but I would throw in a couple of ice cubes to thicken it up. Likewise feel free to skip the protein powder if you're not into that sort of thing, and this tastes great made with almond, cashew or sunflower seed butter.
Paleo Coconut Chai Shake
1 cup coconut milk
1 tbs. vanilla extract
2 tbs. nut or seed butter
1/4 cup unsweetened shredded coconut
1 tsp. ground ginger (can use freshly grated)
1 tsp. cinnnamon
pinch of allspice
1 tbs. ground flaxseed
1 scoop hemp protein powder (optional)
1/2 frozen banana, cut into chunks (or a few ice cubes)
Combine all ingredients in a blender and process until smooth.
