Yes, it's finally warm here in the Northeast. Yes, I still always have pumpkin on hand, as I buy canned organic pumpkin by the case on Amazon! Can't say I eat it every day, but I love to have it around for quick and tasty breakfasts like this one.
I'm on day 3 of my sugar detox and so glad I'm doing it! I honestly think after this stint I will be able to drink my coffee without my usual packet of stevia, and I definitely haven't been craving any sweets.
This morning's pumpkin porridge was totally satisfying and delicious as written, but if you aren't following a detox or want to serve it to kids who would reject it unsweetened… I'm guessing about 1/2 tsp. honey or maple syrup are all you'd need.
This is almost like a mug muffin but a little more moist thanks to the added almond milk. I mixed and ate mine right out of my mason jar, so it couldn't have been easier to whip up. I chose to stir in pecans and shredded coconut, but I think raw cacao nibs or ground flax would be tasty here too!
Paleo Sugar Detox Pumpkin Porridge
1/3 cup organic pumpkin puree
1 tbs. raw almond butter
pinch of salt
1/2 tsp. cinnamon
2 tbs. unsweetened almond or coconut milk, plus more for serving
2 tbs. shredded coconut
1 tbs. chopped raw pecans
Combine all ingredients in a microwave safe bowl or jar. Heat on high for 2 minutes or until set. Drizzle with a little more almond or coconut milk before serving.
