Paleo Pizza Meat Loaf Muffins

I swear my muffin tin gets more use for savory meals than it does for its intended purpose. My kids are fan of miniature food, so baking up shepherd's pie, meat loaf and the like in individual portions always ensures they're extra enthusiastic about eating it.

These came out really well, with both of my kids requesting seconds. I used a mixture of ground turkey and sausage, but you could sub in beef for some of the protein, or use all of one or the other. You could also include cheese if you do dairy, or skip it.

Paleo Pizza Meat Loaf Muffins

1 tsp. olive oil
1 medium onion, chopped
1/3 cup roasted red peppers
1 lb. ground turkey
2 Italian sausage links, removed from casing (or 1/2 lb. ground protein of choice)
1 egg
1/4 cup freshly grated Parmesan cheese (optional)
1/3 cup almond meal or ground flax
3 tbs. pesto
3/4 tsp. salt
1/2 tsp. garlic powder
1/3 cup pizza or marinara sauce

Preheat oven to 375.

Heat olive oil in a skillet over medium heat. Add onion and sautee until soft. Put in a food processor or blender, add roasted red peppers. Pulse about 10 times or until mixture is not quite smooth.

Put onion mixture in a large bowl. Add meat, egg, cheese (if using), almond or flax, pesto and seasoning.

Use hands to combine ingredients until well-mixed. Grease a muffin tin and distribute meat mixture into cups.

Bake at 375 for 18 minutes. Spoon pizza sauce over "muffins" and return to oven for another 10 minutes.
