No-Bake Chocolate Haystacks

Paleo or not, I've been making this treat as written for years. Most traditional chocolate haystacks resemble hay due to their inclusion of crispy chow mein noodles. Those things have always scared me, so I'd much rather use coconut!

You can use any nuts, seeds or even dried fruit you might want to include here. I suppose they aren't so much as haystacks as they are no-bake chocolate "goodies."

I used a bag of Enjoy Life chunks, but you could also melt down chocolate in bar form so I tried to estimate the amount. I also like to include a little sea salt, but if you don't like salty and sweet together feel free to skip it.

No-Bake Chocolate Haystacks

1 bag Enjoy Life mini chocolate chips or chunks (or about 1 1/2 cups chocolate)
2/3 cup shredded unsweetened coconut
1/3 cup nut of choice (I used chopped pecans… slivered almonds are great here!)
1/3 cup roasted pumpkin or sunflower seeds
2 tbs. ground flaxseed
pinch of salt

Melt chocolate in a pot over low heat until it's smooth, stirring often.

Pour in remaining ingredients and stir to thoroughly mix. Drop by tbs. onto a parchment or Silpat-lined baking sheet.

Chill for at least an hour or until firm before serving.
