Green Apple Salad Dressing


I have been making this dressing for a couple of year now, and love that it's creamy without nuts, dairy or any kind of milk/cream. Added bonus? Crazy easy to make and completely sugar-free.

You do have to be very careful with the balance of ingredients. I've added too much garlic and ginger and it gets WAY too bitter. A good rule of thumb is to start with a little less of those ingredients, and then taste and adjust to suit. I've found that 2 garlic cloves and about 1/2 inch of ginger has yielded the tastiest results for me.

This yields a lot of dressing, so it's great to whip up at the beginning of the week and then have on hand for salads throughout!

Green Apple Salad Dressing
adapted from Nourishing Meals

1 medium green apple, cored
2-3 garlic cloves
1/2 cup water
1/3 cup olive oil
1/2 inch piece of peeled fresh ginger
sea salt, to taste

Combine all ingredients in a Vita-mix or powerful blender or food processor. Process until smooth and creamy. Adjust seasoning to taste.

  1. How long is the frige life for this? A week at least?

    1. I would think at least a week, as there aren't any ingredients that would make it inclined to spoil quickly!
