Paleo Tuna, Apple & Cranberry Salad

I swear, all I have eaten this week is soup and salad. I've made a few big batch salads to enjoy at lunch, and then it's been so frigid at night that all I've wanted it to tuck into a bowl of hot stuff.

Since my version of Trader Joe's curried chicken salad was so successful, I thought I'd tackle the caveman's favorite store-made salad: Whole Foods' tuna salad with fuji apple and cranberry. Mayo used to make it aside, I also find fault with how much the store charges for it! I'm always giving the caveman a hard time when he spends $9 on tuna salad…

I looked at the label and think I came pretty close to the ingredients and flavor. I'm not a huge fan of dill, so I confess that rather than spring for a bunch of fresh dill I wouldn't use I went with dried. I also use juice-sweetened cranberries to cut down on added sugar.

Paleo Tuna, Apple & Cranberry Salad

2 5 oz. cans Wild Planet wild albacore tuna
1 small chopped apple
juice of 1/2 small lemon
1/4 cup juice-sweetened dried cranberries
1-2 tsp. dried dill
1/3 cup homemade paleo mayo

Put chopped apple in a medium bowl and squeeze lemon juice over it to prevent browning. Add cranberries and dill.

Drain tuna and put in a separate small bowl. Flake with a fork. Add tuna to bowl with apple. Fold in mayo and mix gently with a spoon. Taste for seasoning and add a little salt and/or pepper, if desired.
