Paleo Minty Green Smoothie


I've never had a shamrock shake, paleo or not. But today is the day everyone pretends to be Irish so here's my contribution to the trend.

This one is a family favorite that we all enjoyed this morning upon my kids' insistence (I wasn't wearing green so they kept pinching me! I needed to do something to appease them…)

Neither likes avocado and my daughter loathes bananas, but both blend seamlessly here and do more to add creaminess and a touch of natural sweetness than to really dominate flavor-wise.

The star is definitely the fresh mint, and I kick up the flavor a bit more by adding just a couple drops of peppermint liquid stevia. Feel free to skip this if you're a purist, as I enjoy the shake just fine without it. Sometimes I get REALLY crazy and throw in a few raw cacao nibs for crunch.

Paleo Minty Green Smoothie

1 frozen banana, broken into chunks
1/2 avocado (not too unripe, or it won’t blend well)
handful of baby spinach
1/2-1 cup non-dairy milk of choice (I opt for unsweetened vanilla almond milk)
handful of fresh mints leaves
1/4 tsp. vanilla extract
2-3 drops of liquid peppermint stevia (optional)

Put all ingredients in blender and process until smooth.
