Crispy Paleo Almond-Crusted Fish


This is the one seafood dish that my kids not only enjoy, but actually REQUEST. I always make it with mahi mahi, but you could use any mild fish.

While I use Kerrygold butter, but you could certainly use ghee for the sauce instead. I'm sure coconut oil would work, but it would definitely affect the flavor of the dish.

To flavor the almond meal I opted for a seasoning blend from Trader Joe's; Italian seasoning, garlic powder, dried basil, dill… all would be really tasty options depending on your tastebuds.

Crispy Paleo Almond-Crusted Fish

1 stick of butter, melted
zest & juice of one lemon
2 cups almond meal
2 tsp. salt
1 tsp. pepper
4 mahi mahi fillets
seasoning, to taste

Preheat oven to 350. Melt butter in a small saucepan; remove from heat and stir in lemon zest and juice. Put almond meal, salt and pepper in a shallow dish or bag.

Rinse and pat fish dry. Dip each filet in butter, then bread with almond mixture.

Place in a baking dish, pouring extra lemon butter sauce over the fillets. Sprinkle with seasoning and bake for 25 minutes.
