Paleo Chai-Spiced Hot Cereal


We are all tea drinkers around here, right down to my 2nd grader. While I like all sorts of different kinds, both kids adore chai. Their favorite way to enjoy it is topped off with some steamed unsweetened vanilla almond milk. This was a fun way to incorporate the flavor into a warming breakfast.

Paleo Chai-Spiced Hot Cereal

1 large ripe banana, mashed
1 cup brewed chai tea
1/3 cup almond meal
2 tbs. ground flax
1/4 cup unsweetened vanilla almond milk or canned coconut milk
pinch of salt
1/2 tsp. ground cinnamon
drizzle of maple syrup

Heat all ingredients but salt in a saucepan over medium heat. Allow to come to a low boil, then lower heat and simmer for 5 minutes, stirring occasionally. Taste for sweetness and adjust accordingly (depending on your banana you might need more than a drizzle of maple syrup).

I drizzled my bowl above with syrup and sprinkled on some chopped raw pecans and a little more ground cinnamon.
