There are some many versions of this quick and healthy treat out there. What makes mine so special? Well, I like to think it's the pistachios and sea salt.
You can obviously garnish with your choice of flavors and toppings, but I have a soft spot for a little salt with my chocolate. Shredded coconut is really good with the pudding as well, and my kids really like Enjoy Life mini chocolate chips stirred in.
While you can use any natural sweetener here, I do prefer stevia over raw honey or maple syrup as I feel it has the most neutral flavor. If you use Sweet Leaf flavored drops you can make a nice minty chocolate pudding to boot.
Chocolate Avocado Pudding
1 ripe avocado
1/4 cup coconut milk
1/4 cup unsweetened cocoa powder
1 tsp. vanilla extract
1 packet stevia (or desired natural sweetener, to taste)
topping: pinch of sea salt & crumbled raw pistachios (or toppings of choice)
Combine all ingredients in a blender or food processor until smooth. Refrigerate or freeze for at least 5 minutes before serving, which will help it firm up.
Garnish with toppings and choice and enjoy!
