Almond Butter Bark


I have been meaning to share this quickie for a while, as it's my kids' new favorite healthy treat.

Paleo Magazine's almond butter bark couldn't be easier to make and works just as well with sun flower seed butter it you want a nut-free option.

I heated my coconut oil and almond butter together for the bark shown, which is why it's so thin. If you prefer a thicker texture then don't heat the nut butter and it won't spread as much.

I also opted for Enjoy Life chocolate chips this time around, but you can certainly use the shaved dark chocolate called for in the original recipe. If you do warm your nut butter and coconut oil you can also add some cocoa powder to the mixture to create a chocolate bark.

Almond Butter Bark

1/3 cup softened coconut oil
1/4 cup raw almond or organic sunflower seed butter
2 tsp. raw honey
2 tbs. shredded coconut
sea salt
small handful of Enjoy Life mini chocolate chips

Mix all ingredients but salt and chocolate together in a bowl and spread on a parchment or Silpat-lined baking sheet.

Sprinkle with sea salt and chocolate chips, then freeze for 1 hour or until firm.
