There are so many sugary holiday coffee drinks out there; some of my Facebook friends keep raving about the new red velvet latte at Dunkin' Donuts, and of course there's the ubiquitous Starbucks lineup.
I decided to take my favorite minty green smoothie and hit it up with a little caffeine to create my own take on a healthy peppermint mocha. Maybe it doesn't come in a festive red cup, but it was definitely just the thing to perk me up as I wrapped gifts!
Peppermint Mocha Shake
1 cup brewed coffee, chilled
1/2 frozen banana
1/2 ripe avocado
handful baby spinach
5-10 mint leaves
1 tbs. cocoa powder
1/4 tsp. vanilla extract
couple drops vanilla, chocolate or peppermint liquid stevia (or other natural sweetener, to taste)
1 tbs. raw cacao nibs or Enjoy Life mini chips (optional, for crunch)
Combine all ingredients in a blender. Garnish with a few more nibs or chips, if desired.
