Paleo Pomegranate Vinaigrette

Pomegranates make me feel festive. The taste, the color… they are the perfect salad accompaniment at the holidays. If I was making today's salad for guests, I would have either used a whole pomegranate (to get the seeds AND juice) or at least sprung for both purchased separately.

This was just for my own lunch, though, so I used a small bottle of pomegranate juice and opted for juice-sweetened dried cranberries I already had in my pantry.

There are so many flavors that would go well with this dressing. I used mixed greens for the base of my salad and included sprouted walnuts, red onion slivers, grilled chicken, sliced pear and the dried cranberries. If you are serving for a non-paleo crowd or do a little dairy yourself, bleu or feta would compliment it beautifully. 

This recipe yields a good amount of dressing. I used it for a large salad and still have enough left over to dress one or two more.


Paleo Pomegranate Vinaigrette

1/2 cup pomegranate juice
2 tbs. olive oil
2 tbs. white wine or apple cider vinegar
2 tsp. dijon mustard
salt & pepper, to taste

Combine all ingredients in an air-tight container with a lid. Shake until thoroughly mixed and taste for seasoning.
