Christmas Spinach Salad with Pear Vinaigrette

So this isn't a holiday-specific salad, but it certainly is a nice festive addition to a Christmas spread. I prepared it yesterday for our family Christmas Eve, but then made a second one today so I could sneak in some photos!

The cheese is obviously optional (I included it since I was serving mostly non-paleo eaters), and you could vary what nuts and fruit you use. The dressing would taste equally delicious made with apple. I also think a little crumbled, crispy bacon would add nice crunch, or you could include some grilled chicken to transform this from a side to main dish.

Christmas Spinach Salad with Pear Vinaigrette

2 large, firm pears
1/4 cup olive oil
1/4 cup white wine or apple cider vinegar
1 tbs. dijon mustard
1 tsp. raw honey
salt & pepper
large bag of baby spinach
1/2 large red onion, thinly sliced
1/2 cup raw walnuts, toasted
4 oz. crumbled gorgonzola cheese (optional)
sprinkle of juice-sweetened dried cranberries

Chop one pear up and add to a blender along with olive oil, vinegar, mustard, honey and a little salt and pepper. Process until smooth.

Thinly slice remaining pear and put in a large bowl with spinach. Add onion, nuts, cheese and cranberries. Pour dressing over top (I had some leftover) and toss to coat.
