Paleo Thanksgiving Round-Up


First off, at the risk of being stoned I need to confess Thanksgiving is *not* my favorite meal. Since I was a little girl I haven't been a huge fan of turkey and gravy, whether white or dark meat. And our family stuffing never did it for me either. I was all about the white carbs and dessert!

This year I'll actually be traveling without my kids on Thanksgiving day, so I'm not cooking and likely won't be eating a traditional holiday meal. I didn't want to totally brush over the event, though, so wanted to compile some of my favorite paleo-friendly Thanksgiving recipes. I'm skipping the bird and focusing more on sides and desserts…

I have a lot of sweet potato dishes in my own recipe stockpile, but these are the ones that I find the best for company:

Streuseled Sweet Potatoes - my adaptation of a festive Cooking Light side dish

Carrot & Sweet Potato Pudding - this one has no added sweetener

Mango-Curry Roasted Sweet Potato Salad - a non-traditional pick that boasts bright flavors

Crispy Pesto Green Beans - just say no to green bean casserole!



Sausage-Stuffed Delicata Squash - hearty enough for a main course, you could also make just the stuffing on its own

"Cornbread" Stuffing - I need to revisit this one with better photos, but it was still delicious…



Crock Pot Pumpkin Pie Pudding - can double as a breakfast treat or dessert

Apple Cinnamon Upside-Down Cakes - can be made with almost any fruit, decadent topped with coconut whipped cream
