Flourless Pumpkin Spice Muffins

This post is specifically for my kids, and anyone else with offspring who you'd like to treat this week without reaching into a bag of candy. Even more specifically, today's muffins gave me reason to dust off my silicone pumpkin-shaped muffin cups. Pardon the overdose of cute.

In many ways these goodies are like a cake version of my popular pumpkin breakfast cookies. It's amazing how nut butter can create nicely textured baked goods without any flour.

I included some Enjoy Life chocolate chips, hemp hearts and raw pecan pieces in the kids' muffins, but you could skip the add-ins altogether or go with your own choices. Likewise honey would be a fine substitute for the maple syrup, but I do think the latter gives it a distinctive flavor.

Flourless Pumpkin Spice Muffins

1 cup raw almond butter
1/2 cup canned organic pumpkin
2 eggs
1/2 tsp. baking soda
pinch of salt
1 tbs. pumpkin pie spice
1/4 cup maple syrup
1/4 cup Enjoy Life chocolate chips
2 tbs. each raw pecan pieces and hulled hemp hearts

Preheat oven to 350.

Put almond butter through maple syrup in a large bowl and combine with an electric mixer. Stir in chocolate chips, nuts and hemp hearts.

Pour batter into greased muffin cups until 3/4 full. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
