Quick Paleo Salmon Patties

Okay, these aren't the prettiest to photograph. How can you make a canned salmon look pretty, anyway?

I needed some protein to include in my salad, and after a little tinkering came up with these. They are a bit fragile, but still passed my flip test. I would definitely let them mixture sit a little before cooking, as it helps the coconut flour to absorb the moisture of the other ingredients.

They are a little bland on their own, but tasted great once I dressed the salad. I think next time I will make some paleo pesto and stir a little of that into the salmon rather than use the chopped spinach.


Quick Paleo Salmon Patties

1 can wild salmon
2 tbs. coconut flour
1 egg
1/2 tsp. garlic powder
1 tsp. onion powder
1/2 tbs. dijon mustard
juice of 1/2 lemon
small handful chopped baby spinach
generous amount of salt & pepper
coconut oil, for frying

Mix all ingredients in a medium bowl until well blended. Allow to sit for a few minutes.

Melt a little coconut oil in a skillet over medium heat. Form the mixture into two patties in your hands and cook until brown on both sides.
