Paleo Apple Cider Vinaigrette


I've been on a big salad dressing kick lately... in fact my fridge is looking like I'm some kind of crazy chemist with all of the mason jars! (the kids' applesauce is on top, then there's today's dressing and a batch of tahini ginger dressing).


This one is super easy and has a nice bit of tang. I put sweetener in the ingredients, but I actually made mine without. I had the caveman taste it and he found it too sharp, so I think perhaps a lot of tastebuds might prefer a little honey or maple syrup mixed in.

Paleo Apple Cider Vinaigrette

1/2 cup apple cider
1/4 cup olive oil
2 tbs. apple cider vinegar
1 tbs. raw agave nectar or honey
juice of 1/2 lemon
1/4 tsp. garlic powder
pinch of cinnamon
1/2 tsp. salt
black pepper, to taste

Combine all ingredients but olive oil in a bowl or mason jar. Slowly pour in oil. Either combine with a whisk or put a lid on the jar and shake until the dressing is well-blended.
