Dairy-Free Apple Pie Shake

I created this one as an after-school snack for my kids. Using the raw cashews helped make the end result very thick and creamy. If you don't have a high-powered blender, you might want to omit the chopped apple (or use stewed apples). I do think the applesauce alone will give a nice apple flavor too.

Dairy-Free Apple Pie Shake

1 cup unsweetened non-dairy vanilla almond milk (can use coconut)
1 cup unsweetened applesauce
1/2 peeled apple, cut into chunks (I used gala)
1/2 cup raw cashews (soak in a little water if you don’t have a high-speed blender)
1 tbs. vanilla extract
1 tsp. ground cinnamon
pinch each of nutmeg and allspice
2-3 pitted dates
1 cup ice

Combine all ingredients in a blender and process until smooth. Garnish with a little more cinnamon and some apple slices, if desired.
