Crock Pot Paleo BBQ Apple Chicken


I really liked this one from The Wellness Mama, but the caveman lamented the lack of crispy bacon. We were out all day, though, so using the crock pot was really helpful for dinner prep. I totally get the crispy bacon thing, but I really liked having the bacon wrapped around the chicken. Hmmm. really big issues here...

BBQ sauce is one of those condiments that can be a total sugar bomb. I think your best bet is to make your own for this one. I made a batch of Civilized Caveman's Beasty BBQ Sauce (and now need to figure out how to best use the rest of the good stuff later this week!).

My kids found the BBQ sauce a bit too zippy on its own, so the inclusion of the grated apple really helped add a little natural sweetness.

Crock Pot Paleo BBQ Apple Chicken

4 boneless chicken breasts
8 slices nitrite-free bacon
1 cup paleo-compliant BBW sauce
2 medium apples, peeled, cored and grated

Grease the inside of a crock pot. Wrap chicken breasts with 2 bacon slices each, then place in bottom of the crock pot.

Mix BBQ sauce and grated apples in a bowl, then pour over the chicken. Cook on low for 7-8 hours or until the chicken is thoroughly cooked.
