Sweet Potato Spread (2 Ways)

It's back-to-school time, which means healthy school lunches and snacks are on many parents' minds. I don't feed my kids 100% paleo, but they do eat both gluten and dairy-free, and I always pack their lunches.
I came up with these recipes as a way to beef up plain old almond butter. Both versions can be served up with fruit or spread on grain-free muffins, pancakes and the like. You could also add a spoonful to a banana shake or certainly just enjoy by the spoonful (I won't judge...)

Sweet Potato Spread

1 cup cooked, mashed sweet potato (about 2 large sweet potatoes)
1/2 cup raw almond butter
1 tsp. cinnamon or pumpkin pie spice
1 tbs. pure maple syrup (could use stevia or raw honey)
pinch of salt

Run all ingredients through a food processor until smooth. Taste for sweetness.
Chocolate Sweet Potato Spread

1 cup cooked, mashed sweet potato 
1/2 cup raw almond butter
pinch of salt
1 tbs. unsweetened cocoa powder
1-2 tbs. Enjoy Life mini chocolate chips
smidge of almond milk or coconut oil

Combine sweet potato, almond butter, salt and cocoa powder in food processor and run until smooth. 

Meanwhile, melt chocolate chips with almond milk or oil (the milk/oil helps it to melt smoothly and not seize up). 

Add melted chocolate to sweet potato mixture and process again. Taste for sweetness (you might want to add a little natural sweetener depending on your preference).
