Paleo Watermelon Mojito Salad

Hats off to both the reader who suggested this recipe for me to make during our vacation, and biggest of kudos to Stupid Easy Paleo for creating it. I've always loved watermelon salads, as there's something about the contrast of the sweet melon with savory flavors that screams summer to me.

I've never included cucumber in the mix, and the dressing really does call to mind a refreshing mojito. This one couldn't be easier to throw together, and paired perfectly with the burgers I made for the kids and lamb kebabs the adults enjoyed.

If you do dairy, a little feta would work amazingly here too (though I think the flavors on their own work just fine without it). If I had made this at home with my own stuff I would have likely used coarse sea salt rather than fine, but otherwise I would suggest making the recipe just as written.
Paleo Watermelon Mojito Salad
from Stupid Easy Paleo

3 cups cubed seedless watermelon
1.5 cups cubed seedless cucumber
2 tbs. fresh mint leaves, thinly sliced
juice and zest of 2 limes
1 tbs. olive oil
(generous) pinch of salt & pepper

Place cubed watermelon and cucumber in a large bowl and add sliced mint.

Combine remaining ingredients in a separate small bowl or jar, stirring with a whisk. When ready to serve,  pour dressing over watermelon mixture and stir gently to combine.
