Paleo Mint Chip Smoothie

I brought my Nutribullet with me on our vacation, as I love the ability to make pesto and sauces, but also some quick smoothies. I usually make this one with avocado for extra creaminess, but I'm saving the avocados I bought for a shrimp salad. Instead I added raw cashews, which also add thickness and texture.

Likewise I don't always include coconut water, but I enjoyed this one after a sweaty morning run, so it was good to have the boost of electrolytes. You could make this will all almond milk, water or all/part coconut milk as well. If I was making it for my kids I'd likely swap the raw cacao nibs for Enjoy Life chocolate chips, but obviously the raw are the more nutritious choice.

This smoothie was so filling that I actually didn't even finish the whole thing. I'd say it makes 2 small servings or one hefty one.

Paleo Mint Chip Smoothie

1 small frozen banana, cut into chunks
1 cup baby spinach
2 tbs. raw cashews
1-2 tbs. raw cacao nibs
1/4 cup unsweetened almond milk
1/4 cup coconut water
1 scoop hemp protein powder (optional)
1-2 tbs. fresh mint leaves
1-2 drops liquid vanilla stevia (optional)

Combine all ingredients in a blender and process until smooth.
