This one was pretty tasty, and definitely easy to make. I adapted it from a Cooking Light recipe.
Paleo Marinated Salmon with Kiwi-Mango Relish
adapted from Cooking Light
1 tbs. raw honey
2 tsp. coconut aminos
1 tsp. olive oil or melted coconut oil
1/4 tsp. black pepper
4 6-inch wild salmon fillets
1 mango, peeled and diced
2 kiwis, peeled and diced
1/2 jalapeno, finely chopped
juice of 1/2 lime
1/4 cup chopped cilantro
2 tbs. orange juice
pinch of sea salt
Place honey through pepper in a large zip-top bag. Add salmon and let sit for 10 minutes.
Heat a little olive oil in a large skillet over medium-high heat. Add fish and cook for about 5 minutes per side, until it flakes easily.
While fish is cooking, prepare relish. Serve salmon topped with relish.
