Paleo Breakfast Ice Cream

I promise I'm not trying to reinvent the wheel with this one. I just have to empty out a fridge and freezer by 10am tomorrow morning, when our stay on the Cape comes to a close. And I just happened to have a couple of frozen bananas and an excess of avocado (I had planned to make a shrimp and avocado salad) on hand.

This is not an ice cream per se, but more like a smoothie without the liquid. It gets its sweetness from the banana, and has a lot of creaminess thanks to both fruits. I chose to include some raw cacao nibs because I like a little crunch; you could easily stir in some raw nuts or just stick to the banana, avocado and nut butter.

I have to say this one really hit the spot this morning, and while I kind of winged it in a pinch I will definitely be revisiting it going forward!

Paleo Breakfast Ice Cream

2 frozen bananas, cut into chunks
1/2 ripe avocado
1 tbs. raw almond butter
1 tbs. raw cacao nibs

Combine banana, avocado and nut butter in a blender, processing until smooth. Stir in the cacao nibs before serving.
