Paleo Shallot & Garlic Burgers

Much as I hate to perpetuate gender stereotypes, I must confess that I don't grill. The arrangement works out fine in our household, as I take care of all of the prep needed prior to anything hitting the flame.

Things took a humorous turn tonight, however, when the caveman grilled up our sweet potato spears and burgers. He plated everything up and my hungry kids were so giddy and excited they all dove in. Before I got my photo op.

My serving still looked somewhat presentable, but I couldn't resist sharing my daughter's plate. Clearly she liked her dinner!
We ate our burgers with heirloom tomato slices and lettuce, alongside grilled sweet potato spears (I parboiled them, then drizzled with olive oil and salt).

You can either cut your shallots up small or thinly slice them for these burgers. I went with the quicker method of slicing, and I thought it worked just fine.

Paleo Garlic & Shallot Burgers

1 tbs. butter
4 shallots, finely sliced
3 minced garlic cloves
1 lb. ground beef, chicken or turkey
2 tbs. coconut or other non-dairy milk
1/2 tsp. salt
1/4 tsp. ground pepper

Melt butter in a large, heavy skillet over medium heat; add shallots and cook, stirring often, until softened and lightly browned, about 5 minutes; add garlic and cook, stirring, 1 minute.

Meanwhile, mix meat, milk, salt and pepper in a medium bowl; stir in shallots and garlic and mix well. Shape meat mixture into patties and grill or cook using desired method.
