Paleo Mexican Chicken Salad
1 lb. chicken thighs or breasts
2 cups jarred salsa
1/2 ripe mango, peeled and diced
1/4 cup chopped red onion
2 celery stalks, chopped
1/2 diced avocado

pepitas, for topping
Cook thighs or breasts using desired method (grill, stove top, etc). Once cool enough to handle cut into small chunks.
Toss chicken with salsa until well coated. Add mango, red onion and celery to mixture.
Put greens in bowl and top with chicken mixture. Scatter avocado and pepitas over the top and serve.
