Paleo Coconut Hot Cereal

This is a nice quick and comforting breakfast. I wanted to make an easy and nut-free hot cereal without using the microwave, and was happy with the results. If you don't have a nut issue you could probably use almond meal in lieu of ground flaxseed, and you could use either maple syrup or raw honey to add sweetness.

I topped my cereal with a hefty sprinkle of cinnamon and some organic blueberries. I also drizzled a little coconut milk over the top before eating.
Paleo Nut-Free Hot Cereal

1 tbs. coconut oil or Kerrygold butter
2 eggs
2 tbs. coconut flour or unsweetened shredded coconut
1/4 cup coconut milk
pinch of salt
1 tbs. raw honey or maple syrup
toppings of choice

Melt coconut oil or butter in a small saucepan over medium-low heat. Add eggs, coconut flour or shreds, coconut milk, salt and sweetener. Stir with a whisk to combine. Stir constantly, allowing mixture to thicken to your liking.

Remove from heat and spoon into a bowl. Finish off with toppings of choice and a drizzle of coconut milk.

  1. wow, finally a cereal that isn't made up of nuts. I am so looking forward to making this. I can't quite believe the eggs don't turn into scrambled but I'll take your word for it. Hopefully, I won't ruin it with ineptitude. Thank you for this -- I have been waiting for a nut-free cereal for years!

    1. I hope it works for you Karen! I found that by constantly whisking I was able to keep the eggs from scrambling, and the cereal had a pretty even consistency.

  2. You mention flax seed in your description of the recipe but I don't see it listed in the ingredients. Does it go in?

    1. Hi Alli! I just mentioned that you could use a tbs. of ground flax instead of almond meal for a nut-free version. For the photo and recipe I didn't use flax.
