Paleo Avocado, Cilantro & Lime Dressing


There's a lot you can do with this dressing recipe. We are big fans of tacos in lettuce or salads with similar seasoning (using everything from seasoned ground meat to crock pot pulled pork).

Often the meat itself has enough flavor that I forego dressing; sometimes, though, I'll admit I miss a nice creamy salad dressing. Today's has the added benefit of healthy fat from avocado, and I refreshing taste that is perfect for hot summer nights.

I think lemon would work in place of the lime juice, but I'm partial to lime and cilantro paired together. While I used avocado oil because I have it on hand (thanks to last week's chicken salad recipe), plain old olive oil would do the trick too.


Paleo Avocado, Cilantro & Lime Dressing

1/2 cup diced, peeled avocado
2 tbs. avocado or olive oil
1 tbs. lime juice
salt & pepper, to taste
1 large minced garlic clove
3 tbs. water
small handful cilantro leaves

Combine all ingredients in blender and process until smooth. Taste for seasoning and serve immediately.
