Easy Paleo Lemon & Garlic Chicken

Two dinners in a row that I personally think tasted better than they look on the blog! Once I plated it the chicken looked a bit plain, so I wanted to share the goodness in the pan with the garlic and lemon. You will just have to trust me!

I served this one up alongside a tomato and cucumber salad tossed with olives and a little mint, lemon & olive oil marinade.

Easy Paleo Lemon & Garlic Chicken

1-2 lbs. chicken thighs and drumsticks
20 cloves garlic
4-5 lemons, cut in half
3 tbs. fresh thyme leaves
salt & pepper

Preheat oven to 400.  Put chicken in a large bowl. Squeeze in lemon juice, then add garlic cloves and thyme leaves. Season heavily with salt and pepper.

Toss chicken to thoroughly coat it, then place it in a shallow baking pan. Add lemons to the pan along with everything that was in the bowl with the chicken.

Bake for 40 minutes (or until done), basting with the lemon and garlic every 10 minutes or so. If you'd like, turn on the broiler for a couple of minutes at the end to really crisp up the chicken skin.
