Primal Cravings' Tikka Masala Chicken

I shared my enthusiasm upon receiving my copy of Primal Cravings in the mail recently, but then was slightly underwhelmed with the first recipe I prepared (the Gyro Taco Salad... loved the avocado tzatziki but found the meat a bit bland).
Happily tonight's dinner was not only incredibly easy, but very distinctive and delicious. If you fans of Indian flavors and a little heat, this one is definitely worth a go.

I used drumsticks rather than wings, as I had gotten them during a big sale at Whole Foods. I also added a little palm sugar to the sauce, as it was a little *too* heated to our tastebuds (and we like spice!).

For cooking I used a cooling rack as opposed to a greased baking sheet, as I prefer for the extra fat to drip off (it's less messy and yields crispier results).

We enjoyed our chicken with a kale salad and plenty of napkins!
Primal Cravings' Tikka Masala Chicken
adapted from Primal Cravings

3 lbs. chicken wings or drumsticks
salt & pepper
1 tsp. garam masala
1 tsp. ground ginger
1 tsp. ground coriander
1 tsp. ground cumin
1 tsp. ground cardamom
1/2 tsp. granulated garlic
1/4 tsp. cayenne pepper
salt, to taste
2 tbs. tomato paste
1/2 cup coconut milk
palm sugar, to taste (optional... I used 2 tsp.)

Preheat oven to 400. Cover a baking sheet with foil and place a cooling rack on top. Pat chicken dry with paper towels and season with salt and pepper. Place chicken skin-side down on rack. Bake in the center of the oven for 15 minutes.

Using tongs, flip chicken over and turn the oven up to broil. Broil for another 15 minutes, or until the skin is crispy.

Meanwhile, combine garam masala through salt in a small saucepan. Saute over low heat or until fragrant (about 5 minutes). Whisk in tomato paste and coconut milk. Adjust taste to suit, if desired (with additional salt and/or palm sugar).

Once chicken is crisp, remove from the oven and toss in the masala sauce.
