Paleo Turkey & Vegetable Taco Meat

We eat some variation of tacos quite often in this house. So frequently that I even titled one post on the subject "Yet Another Paleo Beef Taco Salad." Well, here's one more for the roster, this one using ground turkey and plenty of fresh veggies.

You could definitely use a different protein here, and mix up the vegetables as well. For topping, I went with minced cilantro and mashed an avocado with some salsa, garlic powder and a splash of olive oil. This meat would taste delicious in lettuce wraps if you'd prefer finger food instead of a proper salad.

Paleo Turkey & Vegetable Taco Meat

1 tbs. olive oil
1 lb. ground turkey
1/2 onion, diced
1 medium squash, diced
1/2 bell pepper, diced
1.5 tbs. chili powder
1 tbs. ground cumin
1/2 tsp. garlic powder
1/4 tsp. red pepper flakes
1/2 tsp. paprika
salt & pepper, to taste
1/4 cup water, chicken broth or tomato sauce

Heat olive oil in a large skillet over medium heat. Add turkey, onion, squash and pepper. Cook until meat is no longer pink.

While meat is cooking, combine chili powder through paprika in a small bowl. Add to skillet once meat is cooked along with water (or broth or tomato sauce). Allow to cook until liquid is reduced, stirring occasionally. Season to taste with salt and pepper.
