Paleo Mango, Coconut & Lime Smoothie

It was so glorious out today that I didn't want to spend much time in the kitchen. I also wanted to offer up a cooling treat to my kids, as they come home from school on hot days literally melting. Hello, delicious tropical goodness that *I* can enjoy as well!

Depending on the ripeness of your mango and size of your banana, you might not find this smoothie sweet enough for you. While I didn't add any additional sweetener, if you find it lacking I would just add a smidge of raw honey.

These proportions yielded enough for two good-sized smoothies.

Mango, Lime & Coconut Smoothie

1 cup fresh chopped, ripe mango
1 frozen banana, cut into chunks
1/2 cup coconut milk (full fat or lite)
1/2 cup water
small handful of ice cubes
zest of 1/2 lime

Combine all ingredients in a blender and process until smooth. Serve immediately.
